Vegan Bolognese at Allegro

I hope that all is well with you. Yes, it has been a few weeks since I have been back to the Wynn or Encore to enjoy a meal.  I think about it all the time but there is so many choices here in town to choose from for plant-based meals and it is important that I continue my explorations.  You might not know this, but Stratta was actually the first restaurant that I blogged about at the Wynn for vegan menu options.  It was a joy to meet Chef Alex Stratta and talk about my project with him.  I was sorry to see him go but I know that good things await him.  Now that Stratta has changed it’s name to Allegro, I thought it was a good time to see what new changes have come about since it has come under the direction of Chef Enzo Febbraro.

It has the same wonderful decor and ambiance…I love the rich red colors there that you also strategically use in other areas of your properties.  The service is as stellar as always. I opted for the Whole Wheat Penne Pasta with a Vegan Bolognese, rich with vegan sausage and vegetables simmered in rich tomato sauce and covered with ribbons of fresh basil.  It was a hearty, rich, and delightful bowl of Italian goodness.  It was a tremendous meal on a cold winter night here in Las Vegas.  I also look forward to the opening of Andrea’s before the end of the year.  I think it will be a little different than anything else you are presently offering and I can’t wait to try the vegan selections.  Happy Holidays to you and your family and may you enjoy a wonderful new year. >

For those of you who might be wondering about all of that…my blogs about any of the Wynn restaurants always open with a little note to Steve Wynn.  I appreciate all that he has done to push plant-based eating to the forefront of things here in Las Vegas, especially on The Strip.  I am not sure if he ever reads them but it is fun to do it.  Allegro provides a great dinner option when you are at the Wynn, especially if you are looking for something Italian after looking at some high end Ferraris a few doors down.  Allegro is open each night for dinner and also has a late night menu that goes till six in the morning.  It is one of the great things that I love about Las Vegas is being able to find a great meal no matter the time of day or night.  I am working my way back through the Wynn and Encore and sampling some of the new vegan menu offerings at the different restaurants.  How can it not be a great New Year?
