Tofu Bahn Mi at Eat
I have been to breakfast a few times at Eat, the hip new eatery open for breakfast and lunch Downtown across from what will be known as Containerville. It is just a short walk from E. Fremont as is going to be in the hub of some very exciting things that are going to take place in the years to come. It was time to make my way back in to try something for lunch at Eat. I know they have a vegetarian Chili, but I wanted to see what I could do with one of the Bahn Mi, Vietnamese-style sandwiches.
You can get either a tofu Bahn Mi or one with seasonal vegetables. Both will need a little modifying to make them vegan-friendly but you can make it work. You need to ask them to do a few things for you. Ask them to grill the baguette without butter or perhaps a little oil. They also need to leave off the mayo and fish sauce, the latter which wouldn’t even make this sandwich vegetarian. I asked them to put a little oil and vinegar on instead. So what you have is a fresh baguette with tofu, fresh veggies and seasonal slaw with a little dressing surrounded by house-made potato chips and a pickle. The slaw included radishes and carrots and was a great combo with the tofu to make a very satisfying little sandwich.
This is another example of making it happen with a little modifying needed, but you can find or create vegan-friendly almost anywhere. The staff at Eat is wonderful and more than happy to work with you…just let them know what you need for them to do. Eat is a great little downtown eatery and is already becoming a gathering place for business and pleasure. I plan to head back soon for another tofu-mushroom scramble for breakfast in the very near future. I smiled in reading the menu once again…”Good food for good people, made with love in Downtown Las Vegas.” As someone once said, “Love is all you need.”
