Okay…that does sound slightly kinky…but there is actually love to be found in a bagel…and it is going to be found at Pura Vida, the all-vegan, all of the time restaurant here in Las Vegas that is winning new hearts and stomachs each and every day.  Just when I think that Chef Mayra could not fit any more love on a plate than she had the last time I was there…she fills my heart and stomach with love all over again.

It was breakfast time…and it was time to dance with a partner that I had never had the pleasure to enjoy before…the Love In A Bagel.  This is a grilled bagel with melted Daiya cheddar, fresh tomatoes, spinach, and avocado.  If that was not enough, Chef Mayra includes a side of tofu scramble and vegan sausage.  Together…magic happens…this was a terrific combo that rocked my little old world.

Love can change the world…and the food and spirit of Pura Vida is all about love.  The food and spirit of Pura Vida can change the world.  Love is found in a bagel and anything else that you can order.  Where else can you say the same thing?  Do you know what was even better than Love in a Bagel?  Being able to spend most of that meal talking with Chef Mayra and once again being fully convinced that if the world could pass through Pura Vida we would see a world transformed by kindness, compassion, love, and flat-out amazing food.
