Veggin Out Cafe at Rainbow’s End

  People have asked the past week or so if I am hungry as I approach the halfway point of my eating just raw vegan foods this month of August.  The answer is that I am more than satisfied and I am finding so many wonderful things to eat.  I have been blogging about some of the places that I have been visiting but I also will be sharing some raw recipes to do at home before the month is through.  I just had a great visit to the Veggin Out Cafe at Rainbow’s End on E. Sahara.  I love the food here at this vegetarian, vegan, and raw organic cafe.  

You really need to visit if you haven’t already.  I have been waiting to come back in and try something from their raw vegan section on the menu.  I ordered a Raw Romaine Wrap, which was three romaine lettuce leaves filled with avocado, cucumber, sun dried tomatoes, raw olives, and chopped onions with a delicious dressing. These wraps were so wonderful, fresh, and just bursting with flavor and goodness.  I really enjoyed the texture that the sun dried tomatoes offered.  It was a perfect size portion for my lunch.  I wanted to top it off with something a little sweet and I chose some raw chocolate protein brownies from Chef Aleta.  They were raw and amazing and made from lots of good things including almond flower, hemp seeds, cocoa, avocado, vega protein powder and more.  Oh my wonderful.

Things have been going great the past couple of weeks eating raw vegan.  I have enjoyed some wonderful juice drinks and smoothies and some terrific raw dishes both out and at home.  My energy has been really good and as a little side benefit I have dropped about 11 lbs. just eating normally.  I can definitely see myself adding a higher percentage of raw into my regular vegan diet and maybe doing at least one all-raw month a year.  There is so much to learn about this side of eating and it is good thing that I am going to be living a good long life to try and absorb and apply as much as I can for health, animals, and the planet.
