Pesto Pasta Greatness at Panevino

Sometimes the word goodness doesn’t quite measure up to what one is feeling.  Greatness is much more appropriate.  I have been eating pasta most all of my life…it is a part of my heritage.  Becoming vegan hasn’t changed that…I just take a little different approach.  Though I had lived the vast majority of my life so far in the San Francisco Bay Area, with a pretty savvy restaurant scene of it’s own, most of the best pasta dishes that I have had…that I did not make myself…have been enjoyed right here in Las Vegas.  And they have all been vegan-friendly.  A number of them have been enjoyed at one of my favorite restaurants in town…Panevino.

You have heard me rave before about all that Panevino has to offer:  a great view of the city, nightly sunsets, planes taking off and landing and a restaurant that is beautiful, classy, and elegant without being pretentious. Remarkable service.  Old world standards with a new world flair.  With a number of vegans on their staff…the kindness, goodness, and greatness have made their way to the menu.  Panevino was one of the first traditional restaurants in town to add a vegan section to their regular menu.  These items are no afterthoughts either.  Creativity and quality from presentation to the flavor in the very last bite that leaves you wanting for more.  The staff is very open to creating special plant-based options for you as well.  I have had some amazing off the menu vegan risottos and primaveras.  Even the delicious bread at Panevino is vegan.

On my last visit I heard about a delightful, fresh vegan pesto that they had just made.  I wanted to try it with some whole wheat pasta and selected some shells and they then added some mushrooms, peas, and tomatoes to the pesto pasta.  It was fabulous and definitely made it onto my best of pasta dish list.  The pesto was so aromatic and delectable.  Paired on a hot night with one of April’s hand-crafted Cucumber Martini’s…well, let’s just say this was everything and then some.  Panevino is not just a restaurant…it is an experience.  It feels like home to me…but it is big enough for all of you as well.
