Spring Vegetable Sushi Roll at Mizumi

 Dear Mr. Wynn…I hope that you had a wonderful weekend.  I surely did.  I wanted somewhere to celebrate a recent real estate closing and decided to come by the beautiful, new restaurant at the Wynn…Mizumi.  It is breathtakingly beautiful.  The long bar area with all of the masks on the wall is remarkable.  I sat at the sushi bar, but a table by the large window by the waterfall would be quite memorable.  Perhaps on my next visit.  The staff was so professional and on top of their game and took very good care of me.  I also wanted to let you know that I tried one of your signature cocktails…The Dream…with champagne, St. Germain Elderflower Liquer, and a preserved hibiscus.  A fantastic celebratory drink.  The vegetarian/vegan menu page at Mizumi provided many wonderful dining options that I certainly could not satisfy in one visit.  I will be back soon.  Thank you again for once again doing things the right way.

Mizumi is a beautiful restaurant.  I mean, at every turn.  The food matched the quality of the surroundings.  There were so many wonderful options on the veg/vegan page that I knew it would take a number of visits to get through it.  I finally decided on a sushi roll…the Spring Vegetable Roll.  It consisted of masago arare, rice paper, butter lettuce, avocado, daikon, white asparagus, cucumber, yamagobo, onion sprouts, yuzu miso sauce, and togarashi.  I have had some great vegan sushi rolls and I would put this up there with them.  I will give them great points for originality.  The masago arare (rice pearl bits) that were stuck to the outside of the rice paper were not only a beautiful touch, but added great texture to every bite.  This was a dynamic combination.  I hardly even touched the wasabi and soy sauce because the yuzu miso sauce sprinkled with the togadashi ( Japanese chile flakes mixed with 6 other spices) was simply amazing with the roll.

Like most of the Wynn and Encore restaurants…these are places to celebrate love, life’s high points, and special occasions.  A great place to take business clients.  You will often pay a bit of a premium for the opportunity to dine there but you will have a beautiful restaurant with great service and top-notch plant-based food options.  These are restaurants to enjoy and be thankful for all that is good in your life.  We do need to enjoy life at every turn and I am personally thankful that my turn led me Mizumi.  I will be back and I will bring others with me…
