Having it Raw at Greens & Proteins
I had the opportunity to join my friend Steve Rypka for lunch at Greens & Proteins. Steve and his lovely wife Marsala are two more of the terrific people that I have met in this past year on my adventure of Eating Vegan in Vegas. This has been one of the best parts of the entire experience. Steve is also a vegan, a green living guru, so knowledgeable about so many areas and has become a favorite person in my world. He is also going to be helping me as I take Eating Vegan to Vegas to another level of adventure in the months and years to come.
Greens and Proteins is a restaurant that has opened in the past year on Eastern Ave. near the 215. It has a very vegan-friendly menu with a number of options to choose from. It is a healthy kitchen and juice bar. They have also added a raw food section to their menu and I wanted to try that. I ordered the Raw Macho Nacho…and with a name like that how could it not be somewhat amazing? It was a mound of pumpkin seed chili, raw vegan cheese, mango salsa, avocado salad and diced tomato over raw corn chips. It was fantastic blending flavors and textures that I have had not enjoyed before. I have to tell you…I felt the raw macho power after eating it!
I also wanted to order a drink from the Greens and Caffeines section of the menu. I went with the Chocolate Veggiechino, which was almond milk, cacao powder, dark chocolate chips, coffee beans, avocado, spinach, kale, collard greens, flax seed, raisins, vanilla, and Stevia. It was a darkish green color…kind of unusual from your normal “green” drink…but I loved it. You had all of the amazing ingredients in it with the overtones of chocolate and coffee. I would order this again right now. I am going to enjoy coming back to Greens and Proteins for some more of the raw food offerings and juices as I do an upcoming month of raw vegan eating that I will be blogging about soon. Watch out world…the raw macho is coming.
