Mackin with Veg Out

  It was a warm…okay, hot…Thursday and we are headed to the Springs Preserve Farmers Market.  Not just to check out the amazing produce offered from Nevada and surrounding states but also to seek out Veg Out, who you will find each and every Thursday there at The Springs Preserve and at the Fresh 52 Farmers Markets on Saturday at Tivoli Village and Sunday on Eastern near the 215.  Of course, Veg Out is Stephanie and Justin, an amazing couple who bring wonderful vegan meals and desserts that you can purchase and take home with you…that is if they make it all the way home.  The vegan brownies with walnuts were consumed before we hit the freeway onramp.  Smiles.

The menu rotates each week and you can always find out ahead of time by following them on Facebook and it gives you chance to salivate in an advance.  I knew that they would have some of their legendary Mackin’ Cheese available and some would definitely be going home with us.  The Mackin’ Cheese is gluten-free rice pasta with cashews, tofu, nutritional yeast and spices.  No cheese, but who needs it when you have something this good?  We also bought some extra Mackin’ Cheese sauce to use for some other creations to come, along with a couple of brownies…one with sea salt and the other with walnuts.  I took the Mackin’ Cheese home and heated it and then mixed it together with some shaved brussels sprouts, sliced garlic, mushrooms, and broccoli that I had sauteed in vegan butter.  I made up some bruschetta to go along with it and it became a wonderful meal of vegan comfort food.  Trust me though, the Mackin’ Cheese can stand alone on its own without any additions.

We are blessed in this Valley to have so many quality Farmers Market options available to us these days.  This was certainly not the case even up to a few years ago.  They are only going to grow and get better and we need to support them.  You will find things at these Farmers Markets that you will not find anywhere else.  If you want to find the incredible weekly offerings from Veg Out…you will need to visit one of these Farmers Markets to do so. Veg Out make eating vegan fun and easy for you.  No excuses.  Just get on down and bring some home with you. Everyone’s world will be a little better for it.
