Crossing the Border for Some Tacos

Fortunately, I did not have to travel too far to do so.  I just had to travel right down the street for lunch at Mandalay Bay at the Border Grill.  Border Grill is very well known in Southern California with outlets in Los Angeles and Santa Monica and with their food truck as well. It has been a popular spot since it opened here at Mandalay Bay many years ago.  Celebrity chefs Sue Milliken and Susan Feniger have continued to tweak the menu and now have a few items that are vegan-friendly.  They are very flexible to work with you to make any dish without meat or dairy in it if it is possible.  I have visited before and blogged about the Quinoa-Crusted Avocado Tacos that are so incredible.  I wanted those again but I wanted to see what else I could find.

They have Vegetable Enchiladas and Potato Tacos on the menu but they are two items that cannot be modified to be vegan-friendly because they are all pre-rolled and made with the cheese in them.  So my server suggested some soft Veggie Tacos and I was down for that.  I enjoyed their delicious salsa trio and chips while I was waiting for the Veggie Tacos.  The plate came out with a serving of black beans and both green and red rice as well.  The Veggie Tacos were delicious and filled with bits of tomato, zucchini, eggplant, baby asparagus, and onions along with the black beans.  Pop a little salsa on top and they were wonderful…and gone in no time at all. Smiles.

While many of the restaurants at Mandalay Bay don’t appear to have vegan-friendly options right off the bat…they are very open and eager to work with you to make a meal work.  There are a handful of great options available there besides Border Grill, including Fleur, The Burger Bar, and Slice of Vegas Pizza.  I would only expect to see the list grow in the months and years to come as customers continue to ask for and enjoy plant-based options.  If you are coming to stay in Las Vegas,  you could stay at Mandalay Bay and almost not have to leave to get something to eat.  And that is a good thing indeed.
