Friends and Vegan Food on The Brooklyn Bridge

Not the real Brooklyn Bridge…but the mini re-creation in front of New York, New York. It was time for a wonderful event, The Vegas Spring Social, that was put on by Lindsay Metter (Blue Luna Marketing), Yolanda Arteaga (Yaevents), and Dr. Darian Parker (WTS International). The bridge was full of people networking and finding out about health and wellness possibilities. Music was rocking the bridge as well as the Zumba dancers who did their workout and took over the bridge. There was also a number of our local food trucks on the bridge and it was a great opportunity to try and find some vegan eats.
There were two of the food trucks that were offering vegan food offerings and both were wonderful. The first was Lola D’s Kitchen that had a delicious Mediterranean spinach wrap with hummus and veggies that was perfect to munch on while talking to friends on the bridge. Lola D’s is available for private events as well and can customize the menu towards plant-based eating. I think that is a terrific resource to have here locally.
We also tried one of the amazing Vegan Pockets from Roamin’ Dough. A wonderful crust filled with zucchini, black beans, corn, scallions, Hatch chiles, a little vegan cheese and a southwest sauce inside with an avocado-cilantro dipping sauce on the side. This was really a great little treat and I hope that they keep this on their regular menu. I would hunt them down just for another one of these.
We had met up there on the bridge with friends Kim Miles and her husband Rick, who were traveling back home to Taos, New Mexico. Kim is a talented artist as well as vegan chef and we go back a long ways together. It was great to share some good food on the bridge with them. We ended up going to Red Velvet Cafe at the Fashion Show Mall from there for dessert. The desserts there are vegan, amazing, and all under 200 calories! We of course had the Red Velvet Cake along with a Chocolate Blood Orange cake as well and some of their fabulous chocolate chip cookies to go. All in all…it was a memorable evening that all started on a bridge in Las Vegas. Thank you to all that made it possible!
