Bringing Home The Bread...

Man cannot live by bread alone…we understand that…but some bread, well you could make a pretty good go of it.  That is most definitely the case with Bon Breads, the original artisan bread company here in Las Vegas since 1999.  Bon Breads has been supplying the best restaurants in town with artisan breads and they keep coming back for more.  I have enjoyed their breads in more than one local restaurant. Unbelievably good.  Bon Breads then started selling their bread at local farmers markets and the people swooned.  Now things have gone one step farther and we can all rejoice…they have opened up a Bon Breads retail store in Town Square.

Carlos Periera is the master baker behind Bon Breads.  ”Bon” means good in French. Good doesn’t really say it all, though.  Great is closer to the truth. Magnifique.  Carlos came to the United States from Lima, Peru at the tender age of 19 and became an apprentice bread maker learning under the masters.  He realized that there was no artisan bread companies here in Las Vegas and this led him to start his own as a one-man operation.  His operation has grown as has his relationship with the top chefs and restaurants across Las Vegas and beyond. Carlos has a passion for bread and Bon Breads is dedicated to the art of artisan bread making.  They use a very old starter dating back over 100 years to France that gives the bread its unique flavor, crust, and texture. They strictly adhere to traditional methods of baking and use only the freshest and finest ingredients. The bread is made from scratch 7 days a week using unbleached flour.  They do not add preservatives or artificial colorants in the bread.  What has been exclusively wholesale is now available to be picked up any day and brought home to your table.

The retail store is located right near the entrance of the Tommy Bahama restaurant (also near MAC cosmetics ladies). It is a small store but tastefully done.  The first thing that hits you when you walk in the door is the smell of freshly-baked bread.  They always have samples to try.  There are many different types of breads on display and many more on their website that are available.  They have drinks to go and also have other products such as olive oil, balsamic vinegar, jarred peppers, spreads, and preserves for sale.  All of the ingredients are clearly marked on each package of bread.  Only the brioche has egg in it and some of the breads have honey…but listen up.  If you call the bakery 24-48 hours ahead of time you can order the bread without honey or other non-essential ingredients and they will deliver it to the store for you to pick up.  How great is that? Most of the other bread is already wonderful and fully vegan-friendly.  The bread makes the best toast, PBJ sandwiches, and bruschettas.  I am going to be featuring some bruschetta recipes in one of my blogs in the next few weeks.  And of course, I will be using Bon Breads.  This bread is ridiculously good.  Don’t just take my word for it, make your way to Town Square and fall in love.  Love is grand…and so is Bon Breads.

Breakfast Time at Pura Vida

Most mornings I am perfectly content with a breakfast of steel-cut oatmeal and fruit and then there the mornings when I want some whole grain toast with perhaps some peanut butter and organic preserves.  Yet there are also some mornings when I want something more…and it is on those mornings I will find my way down to Pura Vida.  It just so happens a couple of mornings a week I am in their neighborhood and it seems like my car now is equipped with a VPS system…Vegan Pleasure System…and it just leads me right to their door.  Imagine that.

When I walk in I am always excited to walk up to the board and see what specials have been created in the mind and heart of Chef Mayra.  I know I can always go with the Latintude Burrito…amazing…or one of the french toast, waffle, or pancake creations. Spectacularly all-vegan, all the time.  But this morning I was wanting something else and it was right there waiting for me…a Tofu Breakfast Scramble.  I dare someone to try this and ever want to eat another scrambled egg again.  It was superb and just perfect for this moment or any other one. A plate full of scrambled tofu, onion, peppers, vegan cheese and chiles along with vegan sausage and spiced potatoes. She even put a Garlic Chive flower on it and I ate that too!  The seeded wheat toast was very good.  I complimented Chef Mayra on her liberal use of peppers and chiles, and she just shrugged and smiled and said, “Of course…always.”  It all does a body good.  And of course to go along with it was a cup of her special chef blend of cuban coffee with a hint of cinnamon.  Add a little coconut milk creamer and we are so good to go.  A couple of glasses of Kangen water and I am feeling great.

It is always great to go to Pura Vida and see friends and meet new ones. It just attracts the coolest people.  The bakery case is filling up and you need to come on down and try some of the delicious vegan bakery items that they have created.  It is well known to most that we all have a sweet tooth or two or three.  I had to grab a little something on my way out and I decided to get a small banana-chocolate chip muffin.  It was so moist and delectable. Breakfast, lunch, or weekend brunch is always magnificent at Pura Vida. Come eat, greet, and celebrate wonderful, delicious, kind and creative food. Tell your friends and have them come down too because Chef Mayra and her great staff will always have lots of love to go around!

English's Quintessentially British

Well, it seems as though the British have landed.  At least as far as the newest restaurant offering at Town Square is concerned.  English’s Quintessentially British has opened up in a wonderful space upstairs across from the Rave Theaters and next to the Blue Martini. The restaurant is open for brunch, lunch, afternoon teas, dinner, and as a gastro pub. High tea anyone?  You can do that here and how terrific is that?  The menu has mostly authentic British offerings but has other items as well.  I would say that the menu has a number of vegetarian offerings, but you are going to have be a little more creative to make them vegan-friendly.  The staff was pleased to help me get things the way that I needed them to be.  You just need to ask.

You really need to start things off with a Pimms Cup.  You may never have had one of these before but once you try this drink…you are going to enjoy it immensely.  It is a drink usually enjoyed by the society folk after a little go at tennis or something like that. It is Pimms gin with ginger ale and usually some cucumber slices floating around and English’s adds sliced strawberries and fresh mint as well.  You can get it by the glass or share a pitcher with someone you enjoy. Very refreshing. Once that was in place…in hand…it was time for a salad.  The one salad I can recommend is the Vegetable Salad. You can get either the appetizer portion or the entree portion.  I got the appetizer portion and it was a perfect size.  Laid on some long romaine spears were grilled vegetables…asparagus, leeks, zucchini, and carrots along with arugula and baby spinach.  Topped with a tasty Dijon dressing and two long croutons. It was a very enjoyable salad and I could do the entree size for a complete meal easily.

Things were a little more tricky with Veggie Pasta.  It is tagliatelle pasta with spinach, mushrooms and garlic.  Have them hold the cream sauce and make sure they just toss things with a little olive oil.  I did not know that it came with shaved parmesan cheese on it and rather than send it back I just picked around it.  It was my fault for not asking and being more specific.  It was a learning point. That is just the way that I deal with it. The pasta itself was delicious and it really exceeded my expectations. And of course, the Pimms made everything go down very smoothly.  The waiter was British, a former soccer player and looked a little like David Beckham.  He did a wonderful job and just added to the atmosphere.  There is dining both inside and out on the patio that overlooks the Main Square as well as the Blue Martini.  I watched the table nearby enjoy tea service.  It looked like the height of civility and they offer a number of different tea service options.  The British have come, they are here, and I hope they stay for as long as they want.  Now it is your turn to come and visit and have a Pimm’s Cup on me!

Sunshine Chile Burger & Fresh Corn & Avocado Salad

It is Sunday and we are back in the kitchen and I am going to highlight one of my favorite vegan food products…Sunshine Burgers.  Along with the Southwest Chile Burger that I am making I am making there is also a Fresh Corn and Avocado Salad that is going to make a terrific meal.  Just listen to a little bit about Sunshine Burgers:  They are pre-baked and browned and a great source of protein from sunflower seeds.  They are soy-free, gluten-free, all natural, USDA certified organic and vegan.  They use organic vegetables, whole grains, and ground raw sunflower seeds.  Sunflower seeds are one of the best whole food sources of Vitamin E, known to reduce the risk of stroke and cardiovascular disease.  These wholesome burgers are full of protein, fiber, healthy unsaturated fats, minerals, vitamins, and phytonutrients.  I get mine at Sunflower Markets but you can also find them at other markets as well.  Many restaurants are beginning to use them around the country as their veggie burger option…but unlike a lot of restaurant veggie burger offerings, these are truly vegan.

I constructed my burger on a fresh whole wheat bun that was slightly toasted with a spread of Earth Balance and Tomatillo Sauce.  I melted vegan pepper jack cheese over the Sunshine burger (I used the Southwest-flavored one this time) and then added caramelized onions, an Anaheim chile, and some spinach leaves on top.  It turned out amazing.  Along side it I made a Fresh Corn and Avocado Salad that I think will become a favorite of yours as well. I would definitely encourage you to keep some of these Sunshine burgers always on hand in your freezer.  There are some other good veggie burgers out there but not all of them are vegan and you need to check that…make sure you read the label.  The ones that are vegan usually indicate that on the front of the packaging.  The Sunshine Burgers are vegan and at the top of food chain as far veggie burgers go.  At least I think so.  In any case…enjoy!

Sunshine Chili Burger 

1  Sunshine Southwest Burger (frozen)

2  slices vegan pepper jack cheese

1  whole wheat hamburger bun

2  tbsp Earth Balance Vegan Butter

1  tbsp tomatillo sauce

1/2 onion (sliced)

1  canned Anaheim chile

5  spinach leaves (rinsed and stems removed}

Dijon mustard (optional)

Preheat oven to 375 degrees.  Place frozen Sunshine Burger on baking sheet.  In a small bowl mix 1 tbsp softened Earth Balance and 1 tbsp tomatillo sauce together.  Spread on both sides of wheat hamburger bun.  Place bun spread side up on baking sheet with burger and place in the oven and cook for 12-15 minutes.  Place 2 slices of vegan pepper jack on burger to melt the last 5 minutes of cooking time.  Remove bun after about 5 minutes or spread is completely melted and slightly toasted. Set on plate. In skillet put 1 tablespoon Earth Balance along with onions and cook over low to medium heat stirring occasionally for about 12 minutes while burger is cooking until they are soft and slightly brown.  Drain Anaheim chiles from can.  Put one aside and save the rest. Place burger on bun and top with caramelized onions, then the chile and top with spinach leaves.  I like to put a little Dijon mustard on too but that will be up to you. Makes 1 burger.

Fresh Corn and Avocado Salad

6 ears corn, husked

2 cups cherry or grape tomatoes

1/2 cup chopped red onions

1 large firm-ripe avocado, pitted, peeled, and cut into 1/2-inche cubes

1/2 cup chopped or torn fresh basil leaves

3 tbsp. Champagne or White Wine Vinegar

1 tbsp Dijon Mustard

1/4 cup extra-virgin olive oil

1/2 tsp. each freshly ground sea salt and pepper

In a large pot of boiling water, cook corn until warmed through, 4 to 5 minutes.  Drain and rinse under running water until cool.  Meanwhile, combine tomatoes, onion, avocado and basil in large bowl. In a small bowl, whisk vinegar, mustard, olive oil, salt and pepper, until blended.  Cut corn kernels off cobs and add to salad, then pour in vinaigrette and toss gently to combine.  Makes 6 servings.

Love is Alive at the Samosa Factory

It was not a date so to speak.  It was more like an encounter.  A meeting of man and food. A cuisine that is mostly kind and full of passion and spice.  It was a relationship that was mutually beneficial.  Plant-based food fulfilling it’s highest purpose.  Many enjoying the food to it’s fullest.  A restaurant with great love and intent providing a wonderful atmosphere for this coming together.  Once again, The Samosa Factory provides that wonderful backdrop for man and food to do that timeless dance of love.

It was so good to see the owner of The Samosa Factory, Rick Aco, again.  He has such a beautiful spirit and not only educates about the food but also encourages and enlightens as well.  When he talks with you about the food and brings it to you…it creates such an intimacy that one usually only finds when they dine at someone’s home.  I feel like I have stepped into his dining room.  I do not feel this everywhere, but I do feel it here at The Samosa Factory.  Rick started things out by bringing out an order of Papadum, which is cracker bread made of lentils.  It came with a spicy green sauce that was a perfect compliment.  Next came a bowl of wonderful that was spiced soy beans with marsala seasoning, ginger, chili flakes, cilantro, and coconut oil. This was absolutely delicious and it is my hope that finds it way permanently onto the menu. There is an expansive vegetarian and vegan section on the menu.  I decided to try an item off of the vegetarian menu minus the paneer cheese.  It was The Chickpea Hot Salad Stir-Fry.  Oh my wonderful.  This was so good…a mixture of chickpeas, peppers, onions, tomatoes, mangos and cilantro served with a side of rice.  I know that they washed my dish afterwards…but it was probably not necessary.

My challenge with going to The Somosa Factory is that there are so many things on the vegan section of the menu that I want to try.  Even some more on the vegetarian side that I want to modify a bit like this meal.  And whenever I think about ordering something new I always remember the last thing that I ordered and I want to order that too.  You may be vegan…you might be vegetarian…you could be “v-curious,” but wherever you may be on your journey…know that The Samosa Factory is a place that you really need to enjoy.  You will be very well taken care of.  You will be served in love. The food will bring you happiness.  You will come back wanting to try something new but still facing a lingering memory of the wonderful that you had the last time you were here. Trust me…it will happen.  You want flavor?  You want fresh?  You want healthy and delicious?  You want a little spice?  If you want all of these things…then I can assure you The Samosa Factory has just the right answer for you.

Notes and Musings:  I have been asked more than once why I don’t include prices most of the time on my “reviews.”  My blog is really not intended to be a normal review like one would read from a food critic.  I am not a food critic, but a food encourager.  I will not be writing about meals that I don’t enjoy.  I have not really had any of those to date. I do my homework and I trust my instincts.  I am also not going to put the prices of the meals on the blog but I will always post the website of the restaurant when it is available and you can easily check out the menu and I encourage you to do so. I can tell you most all of the meals that I will be enjoying will be under $20.00 and many of those will be under $10.00.  Even in the fine dining restaurants that I have been to I cannot see myself ever spending more than $25.00 on a quality vegan meal.  This supports the idea that plant-based eating is in fact more cost effective for the consumer.  Not only does the animal pay a price but so does the consumer…in so many ways. You do not have to pay more to eat kind and healthy.  This holds true for the groceries we purchase for home as well, where we enjoy most of our meals anyway.  This is where you can really save money and do what is right for you and your family, animals, and the planet.

Vegan High Society...

Dear Steve Wynn…it was another hot, but lovely summer day and a wonderful day to visit your Encore property once again.  The pool, in particular, seemed to be doing stellar business today.  I always love walking through your properties.  They are not only beautiful, but I love all of the attention to detail.  All of the lovely people having a lovely time.  You know, of course my, real reason for being there.  Quite simply put…to eat.  I was fortunate to have the lovely Theresa with me.  She has only had the opportunity to accompany me to the Encore on one other occasion…to dine at Botero shortly after it opened. I had spoken highly to her of my last visit to the Society Cafe…and that would be our destination for today.  There were more items to try on the vegan menu.  It was a wonderful visit and we left completely satisfied.  I am still looking at some dates for my Wynn staycation…where I hope to get lost in as many vegan offerings as I can handle over the course of a couple of days.  It would be a pleasure to have you join me for one of those meals.  Thank you once again for being on the forefront of not just a culinary trend…but a movement.  It is the right thing to do and I know that people will come from all over to enjoy the amazing vegan food offerings.  Make it a great day!

It would be a mistake to ever think of Society Cafe as that kind of restaurant that every property has that is open almost all the hours of a day because we don’t always think quality when we think of those places.  The Society Cafe is so much more.  The decor, the food, the service.  It is comfortable…but it has class.  You can be casual if you like, but no matter what time of day, you will dine well.  I wanted to try some other items off of the vegan menu this visit but I did choose one from my previous visit.  It was the Sweet Summer Corn Soup.  Tremendous presentation and sweet and delicious.  We then ordered a The Grilled Vegetable Flatbread with a white bean puree and marinata, roasted artichoke, eggplant, peppers and Daiya vegan cheese.  It had a very rustic feel to it and all of the wonderful vegetable flavors came pouring through.  The almost cracker-thin crust was perfect.  So very good. Perfect for sharing.

We then ordered a Wynn Vegan Burger with cheese.  This was a Gardein burger patty, vegan American cheese, ketchup, yellow mustard, sliced pickle and onion.  In was served in a wrapper in a recycled cardboard box tray with some thin-cut fries and a chocolate shake.  It looked very old school with a new school attitude and sensibility. The shake was delightful and was made from a coconut milk base. If I were not to tell you that this was a vegan burger…I doubt that you would know.  It was delish.  I did know, though, that it was completely animal free and that made it taste even more incredible.  We were “In” to this…if you know what I mean…but we did not want to get “Out.” We had just a little bit of room to enjoy something to top all of this off.  We shared the sorbet sampler, which today happened to Lemon, Raspberry, and Mango. Three distinct flavors and textures.  The lemon was tart and sweet at the same time and a little icy.  The raspberry was sweet and bursting with flavor.  The mango was smooth and tropical-tasting. A perfect ending to another visit to high Society on the Strip.  The somewhat bad news was that we ate everything and now it was time to go. The great news was that there more vegan options on the menu still to try.  I am always up for a visit to Society where you can be assured I will show forth my best table manners.

Roasted Vegetable Salad at CPK

Sometimes all I want is a salad.  This is partly because I really like salads. When you think of a salad this can conjure up so many things in your mind. Putting a little bit of lettuce on a plate with some high-calorie dressing is not my idea of a salad.  That is just a mess and not particularly of any benefit to anyone.  A salad should be a celebration of all things fresh, organic, and healthy and a virtual symphony of colors, tastes, and textures.  That is what I believe a salad should be.  A salad done properly can be a meal in of itself. Not only satisfying but nutritious as well.  When I heard that California Pizza Kitchen had a new Roasted Vegetable Salad…well, it was my turn to say “I’m all in.”

The only other reason I go to California Pizza Kitchen is the Vegetarian Japanese Eggplant thin-crust pizza with no cheese.  Absolutely delightful and absolutely vegan.  One of the things I am oft to do on a Sunday afternoon in the fall when I am working is to sit at the great counter at CPK on one of my breaks and enjoy that wonderful pizza and watch a little football on the big screen.  If I am very fortunate, either the Patriots or 49ers will be playing someone.  Yes, those are my teams.  I was born, raised, and lived most of my life in the Bay Area and the 49ers have always been my team.  For the first part of my life they were woeful.  And then for a span of almost 2 decades they became one of the most dominant teams in NFL history.  The reasons I like the Patriots are two: the quarterback and the coach.  I have followed the quarterback, Tom Brady, since he was a prep player in the Bay Area and the coach because I like the way he goes about doing his business. But this is not that kind of blog…so back to the food business.

One of the things that I like about California Pizza Kitchen is they have a guide online that breaks down which items on their menu are acceptable for vegetarians and vegans.  It is very specific and I would go off of this rather than what you might hear from a server.  You can find it at www.cpk.com/menu/pdfs/vegetarian.pdf  .  I hope that more restaurant chains will follow suit with this. It is very helpful.  I started off with something from the small plates menu.  I ordered a white corn guacamole and chips.  This was avocado, white corn, black beans, jicama, scallions, bell peppers, cilantro, and serrano peppers with a mixture of regular and blue corn chips.  It was a chunky guacamole and it was perfect scooping and eating.  A wonderful way to start the meal.  The salad itself is beautiful, colorful, and delicious. It consists of a mixture of roasted artichokes hearts, asparagus, eggplant, red and yellow peppers, corn and sun-dried tomatoes served warm over Romaine lettuce and topped with avocado chunks.  Your vegan options for a dressing are the fat-free balsamic, Thai peanut, and sweet and sour.  I went with the balsamic, not the Dijon balsamic that normally goes with the salad. Even though there was no football on, it was a meal that I enjoyed very much and I applaud CPK for the strides they are making. When you are out and about at either Town Square or Fashion Show Mall and with someone with whom you like to share…try the thin-crust Vegetarian Eggplant Pizza without cheese and this Roasted Vegetable Salad and you will have a couple more reasons to be loving this wonderful life of ours.

Nom Nom in the Morning + Afternoon Delight

No, no…it is so not what you are thinking.  I was stopping by one of my favorite places, Sunrise Coffee, and I realized that I would be playing a doubleheader here today.  I was here for some breakfast…but something was calling out to me to come back in the afternoon.  Being the easy-going guy that I am…I gave into the desire and made it happen. So here I am…combining two visits to Sunrise Coffee in one day into one blog post.  All I can say…is that each was a beautiful encounter.

It was breakfast time so I settled in with a large mug of their wonderful organic coffee and then ordered one of the items that I had not tried before…The Nom Nom Breakfast Burrito.  While my order was being prepared curiosity got the best of me and I had to ask the lovely barista what “Nom Nom” meant.  It was a term that I was unfamiliar with. She looked at me for a moment, and I think she slightly blushed, and she said that she thinks that it has something to do with the sound of eating.  Alrighty then.  I left it at that.  When I made it home…it did what most inquiring minds would do…I Googled it. The answer came in less than two seconds. Although some tried to put their own spin on what it meant…imagine that…the consensus was that it referred to the sounds one made when eating something that was tasty and enjoyable.  My mini-mystery was solved.  Back to the Nom Nom Breakfast Burrito, though, in particular. When ordering, ask them to make it vegan.  It is a large spinach tortilla with beans, potatoes, tofurky, tomato, avocado, spinach, and veganaise.  It was a wonderful way to start the day. Everything was super fresh and wonderfully delicious….and I think the table of 20-somethings next to me could faintly hear the “nom nom” come out of my mouth between bites.  That might explain why they kept looking over at me and smiling. Perhaps.

I had a little break in the afternoon so I headed back to Sunrise Coffee…as I am want to do.  I was a man on a mission.  I had one thing in mind…an afternoon Affogato with soy ice cream.  Affogato is Italian for “drowned.” What we have here is a glass filled with soy ice cream and then drowned in hot espresso with a little bit of chocolate…just enough to take you to another level of pleasure.  They even give you this tiny little silver spoon to eat it with so you can truly savor each bite…and you will.  I probably over-use this word but I really don’t say it unless I mean it…but this was AMAZING! At this point I am probably making unintelligible sounds, though nom nom might be among them.  I drive by this place a number of times a day…what am I going to do?  I decided that I will treat myself once a week…if I am really good, maybe twice…to one of these superb little affogatos.  I have had these in a number of places…even in Italy…and this was my favorite by far.  Go try one for yourself…you will thank me…you will like my fan page on Facebook…you will esteem me highly for the recommendation.  But really, don’t thank me…thank the wonderful staff at Sunrise Coffee…and treat yourself…you so deserve it!

You Will Love Arepas Too...

  I love eating ethnic food.  I love the discovery, the smells, the sights, the tastes, and the adventure of it all.  I am no Anthony Bourdain…but how cool would it be to travel around and find, enjoy, and celebrate the best vegan food possible?  That would be pretty amazing…and now, that is officially out in the Universe.  Are you listening Food Network? Travel Channel? A show like that would be a definite sign that the food revolution was in full swing.  I felt a little bit like that food adventurer visiting I Love Arepas on the corner of Las Vegas Blvd. South and Wyoming.  This is a little restaurant/stand in the parking lot of Dino’s Bar right in the heart of the craziness of all the wedding chapels, tattoo parlors, bail bonds and the like.  But is it worth the stop? Oh yes.

Arepas celebrates authentic Venezuelan food.  Arepas are pancake-like, flat and round made of cornmeal or flour that can be grilled, baked, or fried. And then folded in half and then stuffed with almost anything imaginable. I Love Arepas uses only fresh ingredients and put it out there that they use no M.S.G., microwaves, or can openers.  I like that…perhaps we should all try doing the same!  The normal arepa batter has a little bit of milk in it, but if you call them at least 10 minutes before you get there, they will will up a vegan batter to make some arepas for you.  They are more than willing to do this.  If you do not call ahead of time just make sure to ask them when you get there and you will just need to wait a little longer for your arepas, but you will be happy that you did.

I chose an arepa with black beans…have them hold the cheese and ask them to add tomatoes, onions, and avocado to it.  Maybe a little cilantro if you like. Order one if you don’t have much of an appetite and two if you want to make it more of a meal.  They also supply a tomatillo and a jalapeno sauce if you want to spice it up a bit.  And of course, I did.  I love arepas!  It was delicious and so fun to eat.  A little messy…but still fun.  I wanted another one…but maybe another day soon.  They have lots of interesting drinks to choose from and you can sit on the stools and little counter that wraps around the stand.  Close your eyes and perhaps you feel like you are eating at a food stand in Caracas.  I have never been there…but I have a vivid imagination.  So head on down for an adventure of your own.  Easy parking in Dino’s lot right there for you.  Take just one bite and you will be loving arepas too.

Something In the Works at Egg Works

Never in a million years…or anytime in these 365 days…would I have expected to find a delicious vegan breakfast at the Egg Works.  I mean, I pass by this place at least a couple times of day on E. Sunset near Eastern.  I would not have stopped there.  There was a day I would have years ago, but not now.  That was until it was suggested to me by a new friend Steve Rypka. He is one of the greenest, and gracious people I have ever met.  Steve writes a column on Green Living in the Home Section of the Review Journal every couple of weeks and is president of GreenDream Enterprises, a company committed to helping people live lighter on the planet.  Steve is a vegan as well, and he wanted to meet for breakfast at the Egg Works because he had a secret to share.

It seems that to most people’s eyes one could perhaps put together some things to eat at Egg Works for a breakfast.  But maybe not something that would be truly impressive. Yet, Steve had a secret.  It seems that the kitchen staff actually kept some tofu on hand for Steve and his wife when they came in so that the staff could whip up something special for them.  He was about to share that something special with me.  Usually…I am very good with secrets.  I don’t go looking for them…but If you tell me one I will keep it that way…unless you tell me to make it a little less of a secret.  I do believe I have Steve’s permission to do just that. On the regular menu there is a veggie skillet that includes eggs and cheese.  But what if we ordered that veggie skillet that includes potatoes, onions, spinach, mushrooms, and tomatoes and substituted tofu for the eggs and avocado for the cheese?  And what if the staff was more than happy to do that for us?  Well, let me just tell you…the results of that little kitchen exercise was spectacular!

Brandon, the friendly and helpful manager at this Egg Works location, suggested some green tomatillo sauce on the side to go with it.  Add a little pepper and hot sauce as well.  Oh my, this was delightful!  The breakfast also includes your choice of toast…I went with 9-grain dry.  It also is served with fresh fruit. Most every day I eat breakfast at home and I am very happy to do so.  I also want to remind you that I will be driving by this location almost every morning and I will think about this breakfast. It was so good! I won’t always be able to stop…but I know that if I do…this will be available and waiting for me.  Here is the deal. This is only available at this location at this time…so don’t go asking for it at any of the other Egg Works.  But do come to this location on E. Sunset at Eastern and ask for it…I hope that you overwhelm them with your desire to try it.  How great would it be for this to be a regular item on the Egg Works menu at this location, and then at every other one of their locations as well?  I believe that it can happen. It will be another sign that the food revolution is spreading to breakfast too. So, my friends…take this little secret of Steve’s, and make it a secret no more!

Two Pesto Cavatappi With Vegan Chic & Sausage

This is a recipe that I created a number of years ago prior to a Christmas Eve buffet that I was doing.  I wanted something that could almost be a meal on its own and also would incorporate the red and green festive colors of the season.  Since that time it has become a favorite that is made every couple of months or so.  Many others have taken it and made it their own…and that is a wonderful thing.

It is using cavatappi pasta…those little spirals that are so fun to eat.  I use two pestos in this dish, a green basil pesto and a sun-dried tomato pesto.  I have included simple recipes for each since making your own is so easy and delicious and also it is difficult to find store-bought pestos that do not have parmesan cheese or some other milk by-product in them.  You can make the pesto ahead of time and have it ready. You won’t use all of it in this recipe so you can use the rest later as a spread for sandwiches or on other veggies or pasta.  I have used zucchini, mushrooms, and red peppers in this dish but you can also substitute others as you would like.  Experiment a bit. Although I use vegan chicken and sausage in this recipe, you can do it without and saute various veggies separately with the different pestos and then toss them together with the pasta.  

I recommend using the Gardein Chicken.  It is now being used in many restaurants for their vegan chicken offering.  Gardein is a plant-based protein made from soy, wheat, and pea proteins, vegetables and ancient grains (quinoa, amaranth, millet, and kamut). It is easy to digest and free of cholesterol, trans or saturated fat and is animal and dairy free.  These only needed to heated a few minutes on the stove top…you don’t need to overcook them.  I also used jar marinara in this recipe but you can also make your own, which would be even better. Also, some might light add a handful of nutritional yeast or Daiya to the warm pasta before before serving, but that it completely optional.

Two Pesto Cavatappi with Vegan Chic & Sausage

1  1lb cavatappi pasta

1   jar (approx 25 oz) marinara (I used Fresh & Easy with garlic and eggplant)

6 oz.  Basil Pesto (see recipe below)

6 oz.  Sun-Dried Tomato Pesto (see recipe below)

2   medium zucchinis (sliced)

8   oz. sliced mushrooms

3   oz. extra virgin olive oil

6   oz. roasted red peppers (sliced)

1  pkg. Gardein Chicken breasts (cut into bite-size pieces)

1  pkg. Tofurky Italian Sausage (sliced)

8  fresh basil leaves (torn) (plus a few extra for garnish)

1  tbsp red chili flakes

salt and pepper to taste

Place water in pot to bring to a boil.  Add cavatappi pasta and cook till al dente.  Drain. Heat marinara on low heat, add sliced mushrooms and red chili flakes and slowly simmer for about 15 minutes, stirring now and again. Heat panini grill or grill pan.  Brush zucchini slices with olive oil and set on grill.  Grill till tender and good marks on both sides.  Set aside.  In skillet over medium heat, add the Gardein chicken pieces a little olive oil.  Cook for one minute and then add basil pesto and cook and stir for another minute until well-coated.  In another pan over medium high heat add a little olive oil and the Tofurky Italian Sausage slices.  Saute till slightly brown for about 3 minutes and then add sun-dried tomato pesto and sliced roasted red peppers and cook for another two minutes.  Place the pasta in a large pasta bowl and add sauce and and torn basil leaves.  Toss well until thoroughly coated.  Add the zucchini slices along with the sausage and peppers to the pasta and gently toss to distribute.  Add the Gardein chicken with pesto last and place along the top of the pasta and serve.  Makes 6 servings.

Vegan Basil Pesto

1/3 cup pine nuts

2/3 cup olive oil

5 garlic cloves

1/3 cup nutritional yeast

2 cups fresh basil leaves

salt and pepper to taste

Place the pine nuts in a skillet over medium heat, and cook, stirring constantly, until slightly toasted.  Gradually mix the pine nuts, garlic, part of the olive oil, nutritional yeast, and basil in a food processor and process until smooth adding olive oil as you go to get desired texture.  Season with salt and pepper.

Vegan Sun-Dried Tomato Pesto

2  cups fresh basil leaves

5  sun-dried tomatoes, softened

3  cloves garlic

1/2 cup olive oil

1/3 cup roasted pine nuts

1/2 teaspoon salt

Place basil, tomatoes, garlic, salt and pine nuts in a food processor and process.  Add olive oil slowly and blend until mixture is desired texture.

Fresh and Easy on A Saturday Morning

  I enjoy working out very much.  To me it is meditative.  It is work, no doubt. But it strangely relaxes and invigorates me at the same time.  I have been a competitive athlete most of my life and sports has been a big part of shaping who I am.  Though I don’t compete much anymore, the gym is a place where I can ultimately work hard to be kind to myself.  I believe we need to be kind to people, animals, and the planet…but it all starts with being kind to ourselves.  That is why I am committed to a plant-strong diet and I will NEVER change back.  It is a part of who I am and one of the kindest things I can do for myself.  But it does not really end there.  I believe if we are committed to a plant-based eating and living…we also owe it to ourselves to continue to optimize our health by exercising regularly.  Not only for ourselves but to set an example of vibrant and optimum health for others as well.  It is a commitment of time…I go to the gym 5-6 times a week… but there are fewer things that I can do with my time that will pay any greater dividends.

A couple of blocks away from the gym is a Fresh and Easy Neighborhood Market.  If you live in Nevada, Arizona, or California you have probably seen these green markets popping up in neighborhoods around you.  I often stop at this Fresh and Easy to pick up items that I need for the day as well as a little something to enjoy after my workout. Fresh and Easy is a newer concept store that is part of the U.S. expansion of its parent company, Tesco, from Great Britain.  Tesco is the third largest retailer in the world behind Walmart and Carrefour.  This retail/grocery giant has come with a smaller-size grocery concept that features fresh produce and just about everything else that you would need.  They attempt to be green and sustainable as much as possible.  They have many many pre-packaged meals under there own brand that are free of artificial colorings and additives, high-fructose corn syrup, and added trans fat.  They have many organic options throughout the store as well as green household products.  The stores are smaller but very well laid out.  Similar in size to a Trader Joe’s, but they have their own vibe going. They are all about creating value for the customer so they will come back again and again.  They are very customer service directed.  Their whole philosophy is built around the idea that fresh, wholesome food should be accessible and affordable to everyone.

One of the things I like to do is grab a few things after the gym to take home and enjoy a healthy something good in a shaded spot in the garden and take in the surroundings with a heart of gratitude.  One of the things that I like to pick up for days such as these or something to take along to work is the Veggie Hummus Wrap. This is a tomato tortilla filled with cucumber, a European lettuce blend, red and green bell peppers, spinach, and red pepper hummus.   It is a perfect size for a meal and delicious too!  I also grabbed an organic Strawberry-Lemonade to drink as well as some watermelon.  The watermelon chunks were in the mark-down section which I check every time that I go in for reductions on their already low prices. This became a wonderful mid-morning brunch for me.  Fresh and Easy Neighborhood markets don’t take care of all of my shopping needs at this point but they are constantly adding new items and are very open to suggestions from customers…so suggest away! They have already added items that myself and others have recommended to them.  And when it comes down to it…who doesn’t want it Fresh and Easy whenever possible?

Fired Up About Sammy's

   I have no doubt mentioned the fact that I do enjoy pizza very much…which does not put me in the minority by any means.  I love to make my own at home, something that is very satisfying and I can control exactly how it is made.  It is a little more of an adventure to find a good pizza that you can say is vegan…with or without cheese when dining out.  I have done it and enjoyed every bite.  Well, I found another one…and I think you will like it too. I found it at Sammy’s Woodfired Pizza, a place where there is certainly more than just pizza.  Their food mantra is “Eat Well…Feel Good.”  What is not to like about that?

Sammy’s Woodfired Pizza first opened in La Jolla, California in 1987 and have 17 locations between Southern California and Southern Nevada.  We have five locations here in the Las Vegas/Henderson area. They have great hours and are open for lunch all the way through a late dinner.  One of the things that I noticed about the menu at Sammy’s is that they have red “V’s” next to the items that are designated as vegetarian.  Nice move.  Of course a number of these would be vegan as well and you can always ask your server if any item can be modified as well.  Many salad and appetizer choices; yet I was here for the pizza. I love the options that they are now providing for people for their pizzas. You can get a whole wheat crust.  You can get a gluten-free crust.  You can get non-dairy vegan cheese (Daiya) to substitute on any pizza.  I decided to go with the Vegetarian Pizza with a whole wheat crust and the vegan cheese.  The Vegetarian Pizza had grilled vegetables including eggplant, onions, zucchini, bell peppers, red onions, roasted garlic sauce and tomatoes.  Let me say this right now…it was one of the best vegan pizzas that I have had to date. The flavor of the the grilled vegetables, that were a little smokey and sweet, the layer of garlic, with a perfect crust and gooey melted Daiya made it everything that I was looking for and more.

I applaud Sammy’s for the changes that they have made already to their menu and I encourage them to do even more.  There is a growing demand for kind, animal-free eating options and that demand is not going to waver. The momentum grows by the day.  Many existing restaurants are adding vegetarian and vegan items to their menus. They are not providing these as afterthoughts but as quality choices for their customers. We need to do our part now in supporting those restaurants that are taking bold steps towards eating that is kind to people, animals, and the planet.  Sammy’s has taken a step and it is a good one.  ”Eat Well…Feel Good,” just rang a little more kinder and true in providing delicious vegan-friendly items to enjoy. I will be back.

Notes and Musings:  A couple of notes that I wanted to add about Sammy’s delicious pizza to make sure that you always get it vegan-style.  The crusts do not have egg but the regular crust has a bit of honey in it so go with the whole wheat or gluten-free.  Ask for marinara sauce on top instead of the pizza sauce because the pizza sauce is not always vegan.  And finally, if you order the Vegetarian Pizza, ask for fresh garlic on it instead of the garlic sauce.  Now enjoy it to your heart’s and stomach’s content!

Rice and Company is the newest restaurant to open at Mandalay Place, taking over a space that has been vacant for a while at the entrance of the Luxor side of things.  I love to slip over to Mandalay Place if I have an extra hour or two and want to catch a quick Vegan Burger at Burger Bar (with a cold Newcastle Draft), check out the oddities at Urban Outfitters, be amazed at the Peter Lik Gallery, get some Veggie Tacos at Tacos and Tequila, be pampered with a straight razor shave and hot towel treatment at The Art of Shaving, or pick up some concert tickets at the House of Blues at Mandalay Bay.  Plenty to do in a limited amount of space. Now there is another reason to go…Rice and Company Asian Bistro and Sushi.

They have done a beautiful job with the space.  Lots of red flowing through a decidedly Asian decor with an upscale feel.  The menu, while not expansive, offers some vegan-friendly meals.  I actually ordered a couple of items off of the Sides Section of the menu and created my own super meal.  I ordered the Mapo Tofu, which was tofu pieces stir-fried in sweet Szechuan sauce (spicy and so nice) with crisp bell peppers, pickled vegetables, green peas, and carrots.  I then ordered the Stir -Fry vegetables.  You can get these seasonal vegetables with a tangy garlic sauce, but I would suggest forgoing the sauce. Just take the wonderfully fresh and lightly stir-fried veggies with a side of brown rice and then spoon the Mapo Tofu and  Szechuan sauce over both and have an amazing feast.  I was so impressed with the color and freshness of the vegetables and combined with the delicious flavor and spiciness of tofu and Szechuan sauce…it was a terrific combination.  It created a delightful and wonderful meal.

The restaurant was hopping on a midweek night so that is indeed a good sign.  There is a tremendous amount of foot traffic that flows past the restaurant so if the food can keep up its end of things…this should be a popular destination place for both tourists and locals.  It is very easy to access Mandalay Place by parking at the top of the parking garage behind the Luxor and crossing the bridge over the pools to the entrance and up the escalators to the atrium level and the opening of the Rice and Company right next to the theater.  Chef Danny Chem has things going in a very good direction with a modern take on Chinese and Japanese cuisine together.  As the sign out front encourages…”Eat Rice, Drink Tea, Slurp Noodles, Stay Healthy.”  That works for me and I know that it will have you chanting the same after a meal at Rice & Company as well.

Notes and Musings:  I had the opportunity to have a wonderful conversation with someone yesterday and the discussion came up about the relevance of using famous people to further the voice of veganism.  Their thought was that they are just people and is that enough of a a reason for someone to make a switch to a plant-based diet? Well, perhaps not by itself.  But that does not mean we should not take it for what it is. They are people just like us, but they also have a platform that we will most likely never have.  This can be used for the good!  We should be about building bridges with people, make a connection, and whatever it is that causes them to pause and think about their own lives…that is a good thing!  The fact that some of the great minds of history chose plant-based eating is very relevant!  They cannot speak today but their thoughts and words live on, as do their accomplishments and this should speak volumes to us all.  If someone today like Ellen or former President Clinton talk about being vegan, this gets people’s attention and hopefully causes them to think a little differently.  You can use the lifestyle choices of the famous as a bridge to begin a discussion or encourage someone else.  Let us all be bridges…and use the lives of others when needed…to connect and reach others and make a difference for people, animals, and our planet.

Bar+Bistro=Beautiful

You have probably driven by it a number of times.  On Charleston Blvd., connected to the Arts Factory.  Right in the middle of the action on First Fridays. The place that looks so interesting with all of the colors and big patio area where all kinds of interesting things take place. That would be Bar+Bistro.  If you have been lucky enough to actually find your way inside…you will find some beautiful things awaiting.  Lots of color…and art from local artists on the walls.  A little funky…and a little fresh.  Some dark corners…and some light ones too. But what you really should come for…is the food.

Bar+Bistro has a lot of coolness in it…a lot of details that I cannot mention in one blog.  It is not a very big restaurant space but they make the most of it. Things start off with some complimentary plantain chips.  They are long and thin and lightly salted and arranged in a glass and placed on the table almost like a flower that you pluck off one petal at a time…and then eat it until it is all gone…and it will be gone. These are really good.  One of the best pre-meal treats I have had in quite a while.  I was fairly hungry so I decided to order a salad and a flatbread.  I ordered the B&B Salad to start.  It was organic greens, tomatoes, olives, and avocados with a citrus vinaigrette. A delightful salad.  I decided to veganize one of the flatbreads by leaving off the cheese and it was delicious.  I ordered the Wild Hongos Flatbread, which had a very tasty tomato sauce, seasonal wild mushrooms, fresh herbs, and leeks.  The combined flavors of the tomatoes, mushrooms and leeks was outstanding. Everything came together perfectly and exceeded my already high expectations.

Bar+Bistro is under the skillful direction of Chef Bene Velazquez.  The restaurant already uses organic ingredients wherever possible. Chef Velazquez shared some very exciting news with me.  In the first two weeks of September, Bar+Bistro is adding a vegetarian/vegan section to the menu! The food revolution continues and Bar+Bistro is going to be on the cutting edge of this culinary trend that is not going to go away. It is not only the vegetarians and vegans that are asking for it…but also the ever-growing legion of v-curious who are interested in healthy and inventive plant-based cuisine. Chef Velazquez has almost 15 years experience creating vegan meals around the country and is going to use this knowledge to add to an already terrific menu. We applaud you for this.  This is going to put Bar+Bistro on the map for so many more people.  There are so many reasons to come visit right now…but in a few weeks let’s all come out, head downtown to the Arts District and celebrate the addition of a vegan section to the menu at Bar+Bistro and enjoy the kindest possible form of culinary artistry that there is.

Wowed by Wazuzu

Dear Mr. Steve Wynn, I hope all is well with you.  Things certainly seemed to be going well the other day the Encore.  There were people everywhere.   I know that people are concerned about what is going on in our country right now, but it is also obvious that there are a lot of people who realize you have to go out and spend a little money to keep the economy flowing as well. Thank you for providing such a beautiful backdrop for everyone to enjoy themselves. It was a beautiful day and it seemed like almost everyone was wearing a bathing suit…and in most cases that was a very good thing!  I was there at the Encore to have lunch at Wazuzu, which has been under the guiding hand of star chef Jet Tila. Perhaps you caught Jet on the Iron Chef recently battling the famous Morimoto. Jet was asked why he chose to battle Morimoto and he said, “I wanted to kill a Giant or be killed by one.”  You know, in a culinary sort of way.  Jet narrowly lost to Morimoto…it was almost too close to call, yet he made Las Vegas proud.  I am sure you were too. Lunch at Wazuzu was spectacular!  I am looking forward to returning and sampling a number of the dishes on the vegan section of the menu…they all look amazing.  I would still like to sit down with you over lunch so lets have your people talk to my people and we will get something set up.  Make it a great day!

Lunch was indeed spectacular at Wazuzu at the Encore.  It is a beautiful restaurant with the centerpiece being a large crystal dragon that stretches along the back wall.  As is the case with all of the restaurants in the Wynn properties there are a number of vegetarian and vegan offerings on each menu.  Wazuzu had an entire page devoted to them and every one looks like they need to be eaten!  Wazuzu blends a number of different asian cuisines together on the menu and the result is just a delight.  I finally decided on the Vegan Drunken Noodles with Crispy Tofu.  This was a bowl of fresh rice noodles with Thai basil, sweet soy sauce, chilie, onions, and veggies with crispy tofu.  I was a little drunk with happiness eating this.  I barely finished the bowl of drunken noodles and I was thinking about when I could have another.  The flavors were amazing. Everything was so fresh and the crispy tofu was a great addition to the dish. I have enjoyed some wonderful meals so far in this vegan adventure, but this would rank right up near the top.  

I have been so impressed with the vegan food offerings at the Wynn and Encore.  It is so refreshing to see what they are offering and the skill and love in which they are preparing plant-based food and elevating it to a world-class level.  It is a tad more expensive than what you may pay at other restaurants around town but that holds true for a lot of food offerings in the nicer properties.  Celebrate life…treat yourself…and treat someone you love to a fantastic vegan meal at one of these restaurants.  They are on the cutting edge of a growing culinary trend and we need to support them.  You have someone in your life who is on the edge about making this shift in their lives towards plant-based eating? Take them to one of the restaurants at the Wynn properties at let this delicious vegan food speak the language of love to them.  You will be doing yourself and your friend a great favor. Make sure you visit the Dragon at Wazuzu…eat the food…and leave still wanting for more.

Tapas on the Table at Firefly

Eat*Drink*Laugh*Dance*Kiss*Discuss*Repeat…that is kind of the mantra they put out at Firefly Tapas Kitchen and Bar.  And you know what? That sounds good to me.  I love tapas…small plates of wonderful from a rich Spanish tradition.  My oldest son Tyler is the Sous-Chef at a highly-acclaimed tapas restaurant in San Francisco called Contigo.  It is one of my favorite places anywhere to go and eat. Along with Julian Serrano and Jaleo, this is the closest thing I can find to that in Las Vegas. Firefly is just a place to be…a place to be seen…a place to enjoy a date…a place to meet friends…a place to eat, drink, laugh…you get the rest.

I like Firefly a lot…I really do!  I love the whole energy there.  In reality. Firefly is much more vegetarian-friendly than it is vegan-friendly.  They use cheese in a lot of the dishes and they are central parts of those dishes so it is not just a matter of leaving it out.  Same goes for eggs.  So we have to be a little more creative.  Of course, no meal at Firefly can be started without the red wine sangria.  It is kind of must-do and makes everything else smile a little more.  Or at least it make you smile more.  So what will it be to eat? One thing for me that is always a must at Firefly is a small plate of the Padron Peppers.  These are peppers (not very spicy hot) flash fried with a touch of salt. Amazing.  So good. My second plate was a warm spinach salad with artichokes, pine nuts, and red peppers.  I just had them leave off the feta cheese.  My third and final plate was the Veggies and Lentils.  This was a small dish with julienned vegetables sauteed and mixed with French Lentils.  Hearty, delicious, and no doubt enough to make the body happy.  

The fun thing about a place like Firefly is sitting at a table sharing food with others. Order a bunch of plates and everyone just picks off what they want from the different plates.  You get done with those, you order more.  Raising a glass of sangria to health, life, and love.  There is obviously a lot of discussing going on along with a lot of laughter.  I didn’t see any kissing or dancing happening when I was there…I guess I will just have to leave that up to you when you come in!

Quinoa with Apple, Fennel and Mushrooms

It is Sunday and time to share a recipe from home.  Today’s recipe is going to feature quinoa, a versatile grain that has been around for literally thousands of years.  If you are like me, quinoa has not always been a part of my diet.  It has been something that I have discovered these past few years.  Sometimes I am a little slow to the party. Quinoa originated in the Andes region of South America.  The Incas held the crop to be sacred and referred to quinoa as “the mother of all grains.”  It is high in protein and fiber, balanced in amino acids and is a complete protein source.  It is a great source of lysine, is gluten free, high in phosphorus, magnesium and iron.  It has a slightly nutty flavor and can be served hot or cold at any meal or as a great snack to give you a wonderful boost.

This is a wonderful dish because it can also be adapted to your tastes.  If you do not like fennel, and not everyone does, then you cans substitute another vegetable in its place. Adjust the flavor and spiciness to fit your tastes.  You can use various types of mushrooms.  I like this at room temperature or slightly chilled, but you can serve it warm as well.  It is wonderful to have on hand in the fridge for a little bit here and there for days afterwards.  Quinoa, no matter how you prepare it, is a great staple to have and enjoy for all vegans.

Quinoa with Apple, Fennel, and Mushrooms

1  lb. quinoa, about 2 cups

sea salt

1/2 cup extra-extra virgin olive oil

6   fresh garlic cloves, minced

1   large red onion, chopped

2   fresh jalapenos, stemmed, seeded, and thinly sliced

1   tbsp. ground cumin

1   tbsp. paprika

1/2 lb. baby bella mushrooms, quartered

1    bulb fennel, trimmed and finely sliced

2    fuji apples, diced

1/2  cup dried cranberries

1    bunch broccoli rabe, trimmed and coarsely chopped

3    tbsp. balsamic vinegar

1/2  cup Marcona almonds, coarsely chopped

3    tbsp. cilantro

1    cup fresh pomegranate seeds

In a large bowl, place the quinoa and rinse in several changes of water until water looks clear.  Drain in a fine mesh colander.  Place in a pot with at least 3 cups of water, cover, and bring to a rolling boil.  Lower heat and simmer for about 15 minutes until grains open up and become soft. Drain and set aside to cool.  In medium skillet, heat olive oil to hot and add garlic and saute for about 20 seconds.  Stir in chopped onions and saute about 5 minutes, until soft.  Add jalapenos and saute for about 2 minutes.  Add cumin and paprika and stir for about a minute.  Add mushrooms and fennel and cook for about 8 minutes. Add apples and cranberries and cook until apples soften but are still whole. Add broccoli rabe and saute for about 2 minutes.  Add vinegar and sea salt to season to taste.  Transfer quinoa and sauteed vegetables to large bowl and toss with almonds.  Serve in bowl or on serving platter and garnish with cilantro and pomegranate seeds.  Serves 6-8.

Notes and Musings:  I just wanted to say that being “v-curious” is a really good thing.  It is a good place to start and everyone that makes a shift in their lives is here for a time. I understand that not everyone is going to come to a place of at least being curious about being a vegan or vegetarian…but many are and many more will.  That is the positive we should focus on.  It does not really matter the reason why someone comes to this point in their lives…whether it be for health reasons, for the sake of animals, or to help the environment.  Because by making that choice you are naturally going to bring benefit to these other areas.  If you become a vegan for health reasons, your health is on the way to being optimized and you are going to develop a greater heart for the cause of animals and also for the environment.  If you become a vegan for the sake of the animals, your health and the environment are winners too.  If you make this change for the environment because becoming a vegan is one of the greenest things we can personally do, you will feel and look better and know that you are showing kindness to animals as well.  The beautiful thing is that we can all grow in our understanding in all these areas and one is no more right than the other.  All will benefit as a result and that is what is important.  It all just starts with being a little “v-curious.” Now what are you going to do with that?

Having it Organic at Elixir Cafe

It is even better when it is organic and vegan.  That is what I found at the Elixir Cafe in Henderson.  I have been wanting to go to the Elixir Cafe since I had heard about the number of vegetarian and vegan items on their menu.  I had also heard about their strong commitment to organic foods wherever possible.  To have a place where you can enjoy some coffee or a large list of healthy smoothies and freshly juiced drinks…select any number of plant-based choices for lunch or dinner, and maybe even hear a little live music, well, The Elixir Cafe seems to have just about all you could want.

The restaurant is in a busy strip mall on Eastern in Henderson between Silverado Ranch and the 215.  Plenty of parking and lots of places to sit inside and out.  Inside there are also a number of sofas to enjoy especially during the coffee lounge time.  There is a large counter bar as well, so there are lots of options for small or large groups.  The Elixir cafe offers a menu with many healthy drink options as well as soups, salads, sandwiches, wraps, and paninis. They have a separate section on the menu for vegetarian and vegan options.  They also make their own vegetarian and vegan burger patties.  I was in the mood for a little spicy…and that begs the question when am I not?…so I decided upon the Spicy Burger with marinated vegan chicken, crisp green lettuce, onions, cucumbers, tomato, cilantro, spicy lime sauce on a whole grain bun. Served on the side were blue corn chips with mango salsa.  The Spicy Burger did indeed have a little kick with it and was also very fresh and delicious.  The blue corn chips and salsa were perfect together and added some more wonderful to the meal.

The next time I come back to Elixir Cafe I am going to try and come back later and at a time when there is some music playing and I can enjoy the full effect of the coffee lounge.  At any time of day you will find a healthy, fresh, organic boost to your day. It is another one of those special places that I am finding that is committed to offering quality food and drinks that are life-giving and vital.  Just the kind of elixir that we all need. If you want something good…and something just a little bit different…then Elixir Cafe will be a place to enjoy.  There are lots of vegan meal choices to try so I will be making my way back…I hope to see you there and maybe we can share an adventure together.

Pura Vida Vegan Enchiladas...Oh My

   I happened to find myself walking into Pura Vida (who can stay away?) right between breakfast and lunch time.  I immediately went to see the specials board to see what was on for lunch.  Trust me…and you know you can by now…it is always good.  The Angel Hair pasta looked really good but I had just had pasta the day before on another adventure, so I zoned in on The Hash My Enchiladas.  Well, Chef Mayra had me, once again, at the name of what I was going to have for lunch; even before she had the chance to say hello.  It looks as though the first plate of enchiladas for lunch was going to be all mine.

While I was waiting, Janee brought me out a refreshing glass of citrus-infused Kangen water.  It was so good!  It was really refreshing on such a hot day.  She then brought me out a  lovely salad of mixed greens, herbs, hemp seeds, and miso dressing.  I ate that about as quickly as a goat would. If that was not enough to tie me over, they brought out a little bit of Chef Mayra’s bean dip and colorful flaxseed chips. If you have not had this bean dip yet…it could be a delicious meal by itself. Oh my. A little while later Chef Mayra comes strolling out of the kitchen with a plate in her hands and a smile on her face.  The first plate of enchiladas for lunch was all mine.  I could tell that this plate had a lot of love infused in it.

The first thing you have to do with a plate of Chef Mayra’s food is just look at it.  As I have commented before…it is art.  Art that you can eat of course. Pura Vida is of course  an all vegan, all the time restaurant.  So you appreciate for a moment all of the goodness and kindness that is on the plate.  It may even prompt you to smile…and that is a good thing. Pretty soon the looking is done…the smelling is done…now you just want to eat and enjoy.  On my plate so beautifully put together were three green chili and tomatilla enchiladas made with white corn tortillas, with beans and vegan cheese, roasted hash peppers, onions, broccoli, and zucchini.  Maybe even a little eggplant…I don’t know. All I do know that it was spicy and delicious.  My mouth was singing that happy song again.  If that was not enough, it was served with a mound of cilantro-lime rice with Jamaican spices and kidney beans.  Almost finished that.  Janee let me know that lunch also included dessert…why of course, why wouldn’t it? I had to take that to go to be enjoyed later.  It was…a vanilla cake with blueberries and a subtle vanilla glaze.  Light, sweet, and wonderful.

Lunch ended up being more than just a meal.  It was a celebration of good, wholesome food that was divinely-spiced and presented.  It was served in love and received in love. It was a plate of wonderful vegan- fusion of cuisine and flavor. This ended up being the focal meal of the day for me.  And rightfully so.  I never quite know what to expect when I come to Pura Vida…but I know that it will always be the best that can be offered for that day.  I came in happy and left a little fuller of that emotion. Pura Vida is a loving and growing family…come and partake of the happiness.

Gourmet Deli Delights at Panevino

You know a few things about me by now.  You know I have a passion for food…and a passion to write about it.  I am adventurous.  I love meeting and connecting with people. I love food that is kind…meaning that it is plant-based…what is going to be best for us, animals, and the planet.  You know I like my food on the spicy side when possible. I like a good glass of wine often when I dine.  I enjoy sitting at the bar in front of open kitchens and watching the action in front of me…feeling the love. I love building bridges…between people and between people and vegan cuisine and expanding horizons in the process.  I delight in cooking and creating and infusing my food with love and passion.  You know that I enjoy many places to dine and just be…and Panevino is one of those places.  There is another part to Panevino that you might not know about and that is its gourmet deli. It has been calling out to me for a while and today I answered that call.

Panevino already has so much going for it.  A great location with a dining room, bar, and lounge that had a wonderful view of the landing strips at McCarran Airport…the Las Vegas Strip skyline, and amazing sunsets.  The place is class.  It is old-school dining with a modern, trend-setting twist. Panevino is one of a handful of quality restaurants here in Las Vegas that now offers a vegan section on its menu. A lot of love goes into the vegan meals on the menu.  They are committed to being on the forefront of this culinary movement that is going to only grow by demand…food that is healthy, delicious, and plant-based.  The restaurant is open at Panevino for lunch and dinner and provides a white-tablecloth dining experience.  But connected to the main restaurant is the gourmet deli which is open every weekday and offering an alternative and quality dining experience.

It is beautiful inside with attractive lighting and gourmet Italian deli products on display throughout the deli.  More than adequate seating.  And by the looks of the lunch crowd here…the Panevino Gourmet Deli is no secret.  The lines of people came for a wonderful selection of sandwiches, salads, pizzas, hot food items, desserts, and so much more.  But the lines moved swiftly and the deli was a picture of efficiency under the guiding hand of Gourmet Deli Manager Matthew Kleinhenz.  Genius if often found in the little things and I like that they use real silverware and not plastic…this is actually much greener.  I like that in the condiment area you can get little containers of olive oil and also balsamic vinegar to create your own mixture at your table to dip the fresh bread that comes with many of the meals. What I came for was found in a very special salad case where they have a wonderful selection of salads that are organic and vegan.  They were all so fresh, healthy, and lovely to look at. But I was here to eat.

I chose to get a sample plate of three of the different salads.  It was a tough choice because they all looked like they should be consumed.  First, I selected the Quinoa Salad with Lemon and Cranberry.  It had quinoa, sundried cranberries, basil, carrot, lemon, and organic canola oil.  It was light, flavorful, and something you would want to eat everyday. I also chose the Orzo Pasta Salad, with orzo, cherry tomatoes, asparagus, black olives, red onions, avocado, basil, and olive oil.  This was delightful as well and the chunks of avocado took it to a wonderful place.  Finally, I tried one of the special salads for the day.  It was an Endive Salad, with endive, tomatoes, red onions, walnuts, apples, artichoke hearts and a light balsamic dressing. This was really good too.  The entire plate screamed fresh, healthy, delicious, and all vegan.  It was enjoyed with a cold bottle of Pellegrino water.  I finished things off with two small scoops of sorbet, one lemon and mixed berry.  The lemon was very good but the mixed berry was out of this world. Once again, perfecto. 

This gourmet deli will continue to call me back to Panevino.  I could see myself sampling some more salads at the deli for lunch and then back in the dining room or bar at night for more plates of vegan wonderful.  It is all very possible. If you do not already have Panevino on your radar…instruct your GPS to get with it.  Give it a chance and see all that this fine restaurant and deli have to offer, and it will become one of your favorites as well.  This gourmet deli more than holds its own.  Trust me…and make your way there…and know this, that you will never be alone. I have great reasons for loving the things that I love.

Vegas Vegan Burger at Burger Bar

Well I guess the title just about says it all.  It was very satisfying to open the menu at the Burger Bar for the first time at see a Vegas Vegan Burger right in the middle of things.  It really helped to make the decision of what to eat an easy one. The Burger Bar is located in Mandalay Place, the shopping and eating area the connects the hotel/casinos of Mandalay Bay and the Luxor.  The Burger Bar always does bustling business and is a favorite of tourists and the convention crowd and yet still a destination point for many locals.   It is the creation of Chef Hubert Keller and there are two other Burger Bar locations in San Francisco and St. Louis.  Chef Keller also has the Fleur Restaurant in Mandalay Bay as well as Fleur de Lys in San Francisco…a place that I have dined at on numerous occasions over the years.  Chef Keller is also well-known for his Secrets of a Chef show on PBS.

This is the second time that I have had the Vegas Vegan Burger at the Burger Bar and I can tell you it is like no other I have had.  The filling of the “burger” is slow roasted eggplant, marinated and pulled roma tomatoes, grilled zucchinis, and sauteed peppers sandwiched between two portobello mushroom caps.  That’s right…no real burger patty and no bread to serve as the buns to keep it all together…but in this case, it is really not needed. The filling is delicious.  A mixture of flavors: grilled, smokey, and even sweet. Sandwiched between two grilled large portobello mushroom caps and held together with toothpicks running down the middle.  The last time I ate this Vegas Vegan Burger I tried to eat it like a traditional burger.  I would not suggest that.  Though you might be more adept than I, I fear that you would lose control of it…like I did the first time around.  I do remember…and I do learn.  This time I ate it with a knife and fork and sliced off pieces at a time and it was delightful…so much more enjoyable to eat.  I stayed in control the whole time.  This is more of a free-form veggie burger, but one that is delightful experience to eat.

There is also a homemade Veggie Burger on the menu, but it is not vegan. The Vegan Burger is served with skinny fries but I might suggest that you switch those out for sweet potato fries if that is to your liking.  I appreciate that the Chef has given a good deal of thought and love to this Vegan Burger.  It is definitely not an after-thought and certainly stands out for what it is on the culinary scene…vegan, inventive, and delicious. Every time I walk by the Burger Bar I see the cookbook and other items on sale…including a skinny tee and a pair of bedazzled Burger Bar panties.  It always makes me smile for some reason.  Head to Burger Bar…try the Vegas Vegan Burger for sure but if you can’t resist the panties…go ahead and grab some of those too.  No doubt you will leave smiling as well…

Notes and Musings:  I just wanted to say thank you to all of you that have connected through this blog to my page at: www.facebook.com/eatingveganinvegas.  It has been up a little more than a week and we already have over a hundred people a part from all over the country.  If you have not liked the page, I encourage you to find it and do so you can get not only the blog to stream into your Facebook news feed every day, but also put you in contact with lots of wonderful people, organizations, businesses, products, articles, and recipes from all over to encourage and enlighten you on your journey.  As I reference on the page regularly, we are in the midst of a food revolution and I believe the more we can get informed and connected the better we will be and the more that we see changes in our own lives and then to the lives of others, animals, and our planet.  Have an extraordinary and kind day!

Bratalian...Life is Beautiful

And the food here is beautiful too.  Bratalian is the sister restaurant of Bacio in the Tropicana, which I had the pleasure of visiting a couple of weeks ago. Bratalian is a restaurant in Henderson with a menu created by the wonderful Chef Carla Pellegrino.  I have been wanting to visit Bratalian and the perfect opportunity presented itself.  If you have not already noticed, I love my pasta.  I love to cook it…I love to order it…I love to eat it…I love to take pictures of it.  It has been a life-long love affair for me. As a vegan, there are so many delicious ways you can enjoy pasta too.  It is truly in my blood. My maternal grandfather’s name was Cappoletti and he came over on a boat from Italy in the early 1900’s.  Funny thing is now we are all trying to find our way back to Italy any way that we can! 

So I was looking to this meal with great anticipation.  I took a seat the bar with just a bit of the setting sun streaming in on me…I like that.  I ordered a glass of Grayson Cellar Cabernet…which was excellent.  There were a number of things that I could have ordered but I had my eyes, heart, and stomach set upon one…Spaghetti Al’Aglio, Olio & Pepperocino.  This is a dish that I have had in a number of restaurants stateside and in Italy as well.  It is simple, with just a few ingredients but done right…the flavors are profound and delightful.  It is spaghetti noodles with olive oil, thinly-sliced garlic and crushed red pepper sauce.  You want to cook the garlic just right…too much or too little takes away from what the dish can be.  All I can tell you…is that it was perfect. This is the best rendition of this dish that I have ever had.  The taste and quality of the ingredients are all distinct yet blend together…beautifully. Soak up a little of the garlic infused oil left in the bowl with some of the fresh bread…ahhhhh.

I really enjoyed visiting with the general manager of Bratalian, Walter Ciccone.  He has decades of restaurant experience and made me feel extremely welcome. He masterfully takes care of his guests.  It was also a pleasure to meet his lovely wife Alessandra, who is deftly cooking and creating with passion in the kitchen.  She is also Chef Carla’s sister…so the bloodlines and talent run very strong between these two restaurants.  We are all the better for it.  This meal needed one more component to make it complete…something…dolce.  I felt like some sorbet and they had a tremendous selection.  I decided on a trio of three different kinds…Lemon, mango, and pear.  Wow. Of the three I loved the lemon and the mango…the flavors literally explode in your mouth and created a wonderful ending to this meal. I look forward to returning soon. This was all that I wanted and more. I would say that I always see life as wonderous…and yet leaving Bratalian…it was indeed, tonight, a little more beautiful.

Miko's...A Place That Changes It All

Perhaps you have walked into a restaurant and in a very short time everything you thought was possible was now expanded so far beyond that you had imagined, you reel a little bit from the impact of it.  This is what is beginning to happen during this one-year blogging adventure of finding a different vegan meal each day here in Las Vegas. The horizons of what I thought possible have been expanded. This is no more true than at Miko’s Izakaya Sushi and Tapanese.  This restaurant will change the way you think about sushi and what is available for vegans to eat and enjoy.

I love this quaint family-owned and operated restaurant on E. Windmill in Las Vegas.  It has a nice-sized sushi bar to sit at if you like and an appropriate number of tables to still keep it rather intimate.  I love that the owner is very present and engages you throughout the entire meal. Quality begins at the top and flows down. As you can imagine the service is stellar.  Everyone greets you when you come in and leave which is common in a lot of sushi restaurants…but they really seem to mean it!  The entire staff is there to make sure that you are comfortable and satisfied all along the way. You are presented with a regular menu…yet the real fun begins when you ask for the vegetarian/vegan menu.

This is one of the things that separates Miko’s Izakaya from other sushi restaurants. They have a wonderful selection of rolls and items carefully and creatively done to take what you thought you could enjoy as a vegan in a sushi restaurant and take it to a whole other place of understanding.  They are to be applauded for this.  And as a result…vegans, vegetarians and the v-curious have, and will, continue to rejoice.  You can find the standard cucumber, avocado, and vegetable rolls in many sushi restaurants and that is good…but this is better.  They have those too, but have taken them up a notch or two.  Each roll is a little work of art. A very inventive and delicious mix of flavors and textures but still holding true to the spirit of the form.

I know I am going to be back to enjoy some of their specialty rolls.  The Hawaiian Rolls and the Popeye The Sailor Rolls are calling out to me.  I knew my main dish tonight was going to be a little filling so I ordered a half order of Agetofu Roll.  This is a roll with deep-fried tofu, avocado, cucumber, ohba (Japanese mint) and some wonderful gomamiso and shoyu sauces. Of course I had a little/lot of wasabi close at hand. Amazing…and just enough to make me want to come back for more. For my main entree I had to try the Vegetable Yakisoba.  I was sitting at the bar and had a chance to watch the chef prepare it.  It was sauteed yakisoba noodles and vegetables including asparagus, cabbage, mushrooms, zucchini,  peppers, onions and more with a yakisoba sauce.  It was served on cast iron dish on a wooden platter.  I have had Vegetable Yakisoba at numerous times over the years but I can easily say that this was the finest that I have ever had.  It was hard to stop eating it and perhaps is one of the most delicious things I have ever eaten with chopsticks.  That will probably hold true until the next time I visit here.

Wherever you are at in your vegan journey…you need to make your way to Miko’s Izakaya. The vegetarian menu has many wonderful items for you and you will find other things like the Vegetable Yakisoba on the regular menu.  This restaurant will change the way you look at sushi and the rest of the Japanese cuisine and what you can eat as a vegan.This restaurant will be on your go-to list when you are having that sushi craving and a wonderful place to bring family, friends, and co-workers.  No matter where they are I believe they will be impressed by Miko’s.  You have heard that some things are game-changers…and Miko’s changes everything…for the better.

Having Lunch With An Alien

Or should I say, “having an Alien for lunch.”  If that were to be meat and cruelty-free, then that would be the case with the Vegan Alien Burrito at Sunrise Coffee. If you have not read one of my earlier blog posts about Sunrise Coffee, this is one of my favorite places to hang out.  It is one of those independent coffee houses that has its own unique energy and vibe and somewhere you just want to be.

The atmosphere is very hip but comfortable.  Artwork from local artists adorn the walls. Much of it is for sale and I have purchased some pieces as gifts.  There is free wi-fi and many people linger for hours and are encouraged to do so.  They have a number of used books there for browsing or purchase with the proceeds going to the local Shade Tree non-profit. Very cool.  They have fresh bakery items daily.  Their delightful coffee and teas are fair trade and organic.  They have a number of inventive specialty-coffee drinks. The staff is very cool and very attentive to your needs.  They are active on social media and are always tweeting or posting on FB about Happy Hours specials or what is going on.  I recently saw a post about a 60 calorie Almond Frappe that they had.  I am not a frappe kind of guy usually, but I do know that you can’t even sniff a frappe and most places for 60 calories.  I tried it and I liked it!

I really enjoy the food at Sunrise Coffee.  It is a limited menu…simple, but good, fresh, and organic and local wherever possible.  Everything can be made vegan…just ask.  I have tried just about everything by now, but my favorite is the Vegan Alien Burrito. I am not sure if it was inspired by nearby Area 51…but what is not to like about a spinach tortilla filled with beans, couscous, vegan jack cheese, hummus, avocado, red bell pepper, tomato, and spinach.  Many of my favorite things all wrapped together.  I have had the Alien for breakfast…for lunch…and for dinner and it is always just about perfect.  My idea of fast-food…but you can linger with it too.  Since it is mid-day I chase it with some of my favorite Peach Iced Tea and it is all good.

As locals, Sunrise Coffee is one of those places we need to treasure.  If you are from out of town, Sunrise Coffee is just about a mile off the Strip, east on Sunset near the airport.  It is a great destination point to enjoy something that the can’t be found at a hotel.  Enjoy your time there and just hang-out or take it to go and head across the street to the new section of Sunset Park. Take a morning or evening walk through the preserve area and to and around the little lake and back again enjoy this little oasis in the midst of this beautiful desert town. Sunrise Coffee is not only vegan-friendly, but alien-friendly as well.  Catch one when you can.

Notes and Musings:  I hope that you are enjoying this blog so far.  After a little over a month of searching out great vegan meals in Las Vegas I am aware of the wonderful things that are happening on daily basis.  Everyday I am making incredible connections with people from all over that are bringing inspiration, ideas, and giftings to be shared. There is an amazing network of conscious and kind eaters out there and the number is growing daily.  This is not a trend or something that will just fade away in time.
